  • Butter
  • Medium or hot salsa
  • 8 (6-inch) flour tortillas
  • Reduced-fat sour cream
  • 4 large eggs
  • Fat-free refried beans
  • 1 avocado, peeled and sliced

Preheat the oven to 350°. Warm the tortillas. Heat 1 (16-ounce) can of beans in a small saucepan. Melt 2 tablespoons butter in a large nonstick skillet.
