Easy potato Kugel


  • 1 package(s) frozen hash brown potatoes (30 ounce bag)
  • 1 onion, chopped (large)
  • 3 tablespoon(s) oil
  • 1 teaspoon(s) Salt
  • ½ teaspoon(s) black pepper
  • 2 Eggs, beaten
  • ½ cup(s) matzo meal

In a large skillet, (I use a wok) sauté onions in oil until they are golden brown. Add defrosted potatoes, salt and pepper and cook for 2-3 minutes. Remove from heat. Add matzo meal and eggs to the potato mixture, mix well. Spray a 9 x13 baking pan with Pam. Pour potato mixture into prepared pan....
