Ingredients

  • 2 whole cloves
  • ¼ tsp. ground cayenne
  • 1 tsp. cumin seed
  • 1-½ tsp. ground mace
  • 1 tsp. white peppercorns
  • 1-½ tsp. ground ginger
  • 1 tsp. whole allspice berries
  • + 7 more ingredients
    • 3 (3-inch) cinnamon sticks, broken into pieces
    • 1 whole nutmeg
    • ¼ tsp. aniseed
    • ¼ tsp. dried lavender (optional)
    • 5 green cardamom pods
    • 1 dried bay leaf
    • 1 tsp. ground turmeric

In a small, dry skillet, toast the cardamom, cinnamon, cloves, bay leaf, cumin, allspice, peppercorns, aniseed, and lavender (if using) over medium-low heat until fragrant, about 3 minutes.
