Easy Red Beans and Rice

Ingredients

  • 1 ½ cups water
  • 1 medium-size green bell pepper, chopped
  • 3 (15-ounce) cans red beans, rinsed and drained
  • 1 garlic clove, minced
  • 1 medium onion, chopped
  • ¼ teaspoon dried oregano
  • 1 (16-ounce) can tomato paste
  • + 7 more ingredients
    • Hot cooked rice
    • ¼ teaspoon hot sauce
    • 1 pound smoked sausage, thinly sliced
    • ¼ teaspoon dried thyme
    • 1 bay leaf
    • 1 (14 1/2-ounce) can stewed tomatoes, undrained and chopped
    • 1 tablespoon vegetable oil

Sauté first 4 ingredients in hot oil in a Dutch oven over medium-high heat 8 minutes or until vegetables are tender. Add beans and next 7 ingredients.
