Easy Red Lentil, Sweet Potato, and Coconut Curry (Gluten Free)


  • 1 cup onion, diced
  • 1 ½ tablespoons coconut oil
  • 1 cup red lentils, dried
  • 1 medium sized sweet potato, cut into 1 inch cubes
  • 1 large carrot, split lengthwise and chopped
  • ½ teaspoon turmeric
  • 1 tablespoon mild curry powder

    • 1 teaspoon powdered ginger
    • ½ teaspoon sea salt
    • Black pepper to taste
    • 3½ cups vegetable broth or water
    • ½ cup coconut milk
