Easy Summer Tomato Special

Ingredients

• 3 medium tomatoes, sliced 1/2-inch thick
• 5 fresh basil leaves, snipped in half
• 1 green pepper, julienned
• ¼ to ½ sweet yellow onion, sliced 1/4-inch thick
• ¹/₃ c red wine vinegar
• ²/₃ c olive oil
• 1 garlic clove, minced or crushed
• + 3 more ingredients
• • 1 t salt
  • 1 t freshly ground black pepper
  • 2 t fresh chopped oregano or 1/2 teaspoon dried

Overlap tomatoes in a circle in shallow dish. Tuck basil leaf between each tomato. Sprinkle onion and pepper over all. Combine remaining ingredients in a jar and shake well. Pour over vegetables and let marinate at least 8 hours. Recipe reprinted with permission from the Junior League Spr...
