Edamame Hummus

Ingredients

  • ½ cup chopped fresh cilantro
  • ½ teaspoon ground cumin
  • 3 tablespoons tahini (sesame-seed paste)
  • ¼ teaspoon kosher salt
  • 1 ½ cups frozen shelled edamame (green soybeans)
  • ¼ cup fresh lemon juice
  • ¼ teaspoon freshly ground black pepper
  • + 3 more ingredients
    • 2 tablespoons water
    • 1 tablespoon olive oil
    • 3 garlic cloves, peeled

Cook edamame in boiling water 5 to 7 minutes or until tender. Drain. Place garlic and next 4 ingredients in a food processor, and pulse 3 times or until chopped. Add edamame, cilantro, and remaining ingredients; process until smooth.
