Edamame Pilaf (Rice with Soybeans)


  • salt and pepper
  • 1 cup(s) shelled edamame, fresh or frozen
  • 2 tablespoon(s) chopped parsley
  • 3 cup(s) broth and/or tomato juice
  • 1 tomato (substitute 1 cup canned tomato with juice)
  • 2 tablespoon(s) vegetable oil
  • 1 cup(s) uncooked rice, brown or white
