Eggplant and Cheese


  • 1 large eggplant
  • ¾ cup(s) olive oil
  • ¼ cup(s) grated Parmesan cheese
  • 8 ounce(s) shredded Mozzarella cheese

Cut eggplant into 1/4-inch slices. Fry on both sides in skillet in oil until browned. Place eggplant slices in baking dish; cover with Parmesan and Mozzarella cheese. Bake at 400° for 10 minutes.
