Ingredients

  • ¼ cup grated mozzarella cheese
  • 2 tablespoons olive oil, or as needed
  • 1 eggplant, sliced lengthwise 3/8-inch thick
  • 3 1/3 tablespoons balsamic vinegar
  • 3 1/3 tablespoons olive oil
  • ¼ teaspoon dried rosemary
