  • 1 (14-ounce) crusty French bread loaf, halved horizontally
  • Vegetable cooking spray
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ½ teaspoon pepper, divided
  • 1 medium eggplant, cut into 1/8-inch-thick slices
  • 1 cup panko breadcrumbs*

    • 2 cups pasta sauce
    • ½ cup grated Parmesan cheese
    • 2 large egg whites

    • 1 cup (4 ounces) shredded part-skim mozzarella cheese
