Ingredients

  • 1 ½ ounces finely grated Parmigiano-Reggiano
  • 12 ½ ounces ricotta (preferably fresh)
  • 1 garlic clove
  • 3 tablespoons fresh basil
  • 1 well-seasoned ridged grill pan or a gas grill
  • ¼ teaspoon dried hot red pepper flakes
  • 1 1 1/4-lb eggplant
  • + 5 more ingredients
    • ½ teaspoon sugar
    • 1 teaspoon salt
    • ¼ teaspoon black pepper
    • 1 ½ pounds plum tomatoes
    • 7 tablespoons olive oil

Cook garlic and red pepper flakes in 1 tablespoon oil in a 2-quart heavy saucepan over moderate heat, stirring, until garlic is golden, about 30 seconds.
