Ingredients

  • ¼ teaspoon salt
  • 3 large heads Belgian endive
  • ¼ teaspoon freshly ground black pepper
  • 3 large heads Belgian endive
  • About 1 tbsp. red wine vinegar
  • ¾ cup finely chopped radicchio
  • 1 can (15 oz.) cannellini or Great Northern beans, rinsed and drained
  • + 9 more ingredients
    • 2 tablespoons olive oil
    • 2 tablespoons chopped chives
    • ¼ teaspoon freshly ground black pepper
    • ¾ cup finely chopped radicchio
    • 2 tablespoons chopped chives
    • ¼ teaspoon salt
    • About 1 tbsp. red wine vinegar
    • 1 can (15 oz.) cannellini or Great Northern beans, rinsed and drained
    • 2 tablespoons olive oil

1. Mix together beans, radicchio, 1 tbsp. vinegar, olive oil, chives, salt, and pepper in a small bowl. Taste and add more vinegar if you like. 2.
