Endive, Sweet Lettuce, and Cashew Salad

  • 2 tablespoons minced shallots
  • 2 teaspoons walnut oil
  • 1 tablespoon sherry vinegar
  • 2 tablespoons honey
  • ½ teaspoon salt
  • 4 cups sliced Belgian endive (about 3 heads)
  • 8 cups torn green leaf lettuce
  • + 1 more ingredients
    • 2 tablespoons roasted unsalted cashews, coarsely chopped

Combine first 5 ingredients in a large bowl, stirring with a whisk. Add lettuce, endive, and cashews, tossing gently to coat. Serve immediately.
