English Country Lemon Cheese or Butter


  • 8 ounce(s) sugar
  • 2 Eggs
  • 3 or 4 ounce of butter
  • 2 Lemons

Whip eggs, add sugar and butter. Blend and add juice from lemons. Put in double broiler. Cook until thickened on low or med heat. Continual stirring to prevent lumping. Cool. Pour into small jam jars with lids. Refrigerate.
