English Pea Purée


  • 1 whole dried chile de rbol
  • 3 cups fresh or frozen peas
  • 1 fresh mint sprig
  • 2 tablespoons butter
  • 1 garlic clove
  • ½ cup extra-virgin olive oil
  • 1 pinch sugar

Heat oil, butter, chile, and mint in heavy medium saucepan over medium heat 2 minutes. Add garlic and stir 1 minute.
