English Pea Salad 12


  • 3 tablespoon(s) mayonnaise
  • 2 hard-cooked eggs, peeled and chopped
  • 1 cup(s) Cheddar Cheese, shredded
  • 1 package(s) frozen peas, thawed and drained (10 ounce pkg)
  • 4 slice(s) bacon
  • salt and pepper to taste
  • 2 teaspoon(s) freshly squeezed lemon juice

In a large skillet, cook the bacon til crispy. Put on paper towel to drain and cool. Crumble bacon. In a medium serving bowl combine the bacon, peas, cheese and eggs. Stir in mayonnaise, lemon juice and salt and pepper to taste. Serve immediately or refrigerate until ready to serve.
