Espresso-Glazed Doughnuts

- ¼ cup (½ stick) cold unsalted butter, cut in small pieces
- 1 tablespoon coarse salt
- ½ cup plus 2 tablespoons pastry flour
- 2 cups bread flour, plus more for dusting

- 1 cup warm milk (about 60 degrees)
