Farmers Market Greens

Ingredients

  • ½ pound summer lettuces such as baby red oak, Bibb, and baby romaine
  • ½ teaspoon coarsely ground black pepper
  • 1 ½ tablespoons shallot
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon salt

Whisk together oil, shallot, lemon juice, salt, and pepper in a large serving bowl. Just before serving, add lettuces to dressing and toss to coat.
