Ingredients

  • 4 ½ pounds unshelled fava beans (about 2 1/4 cups shelled)
  • ½ teaspoon red wine vinegar
  • ¼ teaspoon salt
  • 1 teaspoon minced fresh garlic
  • 1/8 teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon sugar

    • 1 cup vertically sliced sweet onion
    • 2 cups sliced, halved plum tomatoes (about 4)
    • 2 teaspoons extravirgin olive oil
