Fettuccine with Spinach Ricotta Sauce


  • 3 clove(s) garlic, minced
  • 3 tablespoon(s) olive oil
  • 1 ½ cup(s) whole milk ricotta cheese
  • 1 cup(s) milk
  • 1 package(s) frozen chopped spinach, thawed and drained
  • 2/3 cup(s) grated Parmesan cheese
  • 3 plum tomatoes, chopped
  • + 3 more ingredients
    • salt
    • pepper
    • 1 onion, chopped (medium)

Cook and stir onion and garlic in oil until tender. Stir in ricotta cheese; cook 2 minutes. Add spinach; mix well. Cook on medium-low heat until thoroughly heated. Stir in tomatoes.
