Fiesta Enchiladas


  • 1 (8-ounce) package part-skim mozzarella cheese, shredded, divided
  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (10-ounce) package frozen corn, thawed and drained
  • 1 c chopped onion
  • ½ t minced garlic
  • Salt and pepper
  • 1 (15-ounce) container low-fat ricotta cheese
  • + 3 more ingredients
    • 1 large egg white
    • 12 (8-inch) flour tortillas
    • 1 (32-ounce) jar salsa
