Fingerling Potatoes Braised with Smoked Paprika


  • olive oil spray, if needed
  • 1 small red onion, minced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste (I used double-strength, but regular will do)
  • 1 teaspoon smoked paprika
  • 1 pinch saffron (optional)
  • 1 pinch cayenne pepper
  • + 4 more ingredients
    • 1 ½ pounds fingerling potatoes (or small red potatoes)
    • 3 cups vegetable broth (Imagine No-Chicken preferred)
    • ½ teaspoon salt (or to taste)
    • 1 tablespoon fresh oregano leaves (optional)
