Fingerling Potatoes with Oyster Mushrooms

Ingredients

  • 1 garlic clove
  • 7 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh Italian parsley
  • 2 pounds small yellow fingerling potatoes
  • 1 pound large fresh oyster mushrooms
  • 4 tablespoons shallots
