Fish in Parsley-Wine Sauce
Ingredients
- 2 garlic cloves, peeled
- 1 cup minced fresh parsley
- 4 (6-ounce) orange roughy or other firm white fish fillets
- ¾ cup dry white wine
- 2 cups fresh parsley leaves
- 1 tablespoon olive oil, divided
- ¼ teaspoon salt, divided

- 1 garlic clove, minced
Place parsley leaves and 2 garlic cloves in a food processor; process until well-blended. Place mixture in a bowl; stir in 2 teaspoons oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper.
