  • 1 ½ pounds skinless meaty fish fillets, such as snapper, bass, tilefish or cod, cut lengthwise into 1-inch strips
  • Salt and freshly ground pepper
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 12 corn tortillas
  • 2 tablespoons vegetable oil
