Five Minute Chickpea Salad


  • lettuce leaves or other greens, for serving (optional)
  • 2 tablespoon(s) finely chopped parsley or cilantro leaves, or a mixture
  • 3 tablespoon(s) bottled vinaigrette, or to taste
  • 1 red bell pepper, chopped
  • 1 can (about 15 oz.) chickpeas (garbonzo beans)
  • 1 cup(s) cooked rice
  • 1 scallion, thinly sliced (substitute 1 tablespoon finely chopped onion)

Drain chickpeas and mix with other ingredients. Serve room temperature or chilled.
