  • 10-½ oz. (2-1/3 cups) unbleached all-purpose flour
  • 4 oz (½ cup) chilled vegetable shortening, cut into ½-inch pieces
  • 1 Tbs. granulated sugar
  • ½ tsp. baking powder
  • 5 to 6 Tbs. ice water; more as needed
  • ¾ tsp. table salt
  • 4 oz. (½ cup) chilled, unsalted butter, cut into ½-inch cubes

Put the flour, sugar, salt, and baking powder in a food processor fitted with a steel blade. Chill for 20 to 30 minutes. Pulse the dry ingredients together for a few seconds to blend.
