Ingredients

  • Jam:
  • ¾ cup diced peeled papaya
  • Dash of salt
  • Lime wedges (optional)
  • ½ teaspoon chopped jalapeño pepper
  • 3 tablespoons red wine vinegar
  • 1/8 teaspoon freshly ground black pepper
  • + 13 more ingredients
    • 1 ½ tablespoons chopped dry-roasted cashews
    • ½ teaspoon fresh lime juice
    • 1/8 teaspoon salt
    • 2 (6-ounce) grouper fillets
    • 2 large egg whites, lightly beaten
    • 2 tablespoons all-purpose flour
    • 1 cup chopped red bell pepper
    • Grouper:
    • 2 tablespoons flaked sweetened coconut
    • 2 teaspoons butter
    • ¼ cup panko (Japanese breadcrumbs)
    • ¼ cup water
    • 2 tablespoons sugar

To prepare jam, combine first 3 ingredients in a food processor; process until smooth. Combine water, sugar, red wine vinegar, and dash of salt in a small saucepan over medium-high heat.
