Fresh Cheese with Spinach

Ingredients

  • 2 teaspoons fresh ginger
  • 2 tablespoons coriander seeds
  • 2 bunches spinach
  • 1 ½ cups pearl onions
  • ½ teaspoon turmeric
  • 1 teaspoon Indian red chile powder
  • 2 garlic cloves
  • + 6 more ingredients
    • 6 tablespoons ghee or vegetable oil
    • 4 plum tomatoes
    • 3-inch cinnamon stick
    • 2 cups water
    • ¾ pound paneer (Indian fresh cheese)
    • 1 teaspoon asafetida powder

Stir together turmeric, 1 1/2 cups water, and paneer and let stand 20 minutes. Drain cheese in a sieve and gently pat dry.
