Ingredients

  • 1 ¾ cups half-and-half
  • Pinch of salt
  • 6 tablespoons unsalted butter
  • 1 vanilla bean, split lengthwise
  • 1 ½ cups heavy cream
  • 1 ¼ cups sugar, divided
  • 1 tablespoon peach preserves
  • + 3 more ingredients
    • 4 large peaches, peeled and sliced (about 3 cups)
    • 8 large egg yolks
    • 1 large whole egg

1. Combine 3/4 cup sugar, egg yolks, and whole egg in a medium bowl. Scrape seeds from vanilla bean, and add seeds, pod, and half-and-half to saucepan.
