- 1 ¼ cups sugar, divided
- 4 large peaches, peeled and sliced (about 3 cups)
- 8 large egg yolks
- 1 large whole egg
- 1 vanilla bean, split lengthwise
- 1 ¾ cups half-and-half
- 6 tablespoons unsalted butter

1. Combine 3/4 cup sugar, egg yolks, and whole egg in a medium bowl. Scrape seeds from vanilla bean, and add seeds, pod, and half-and-half to saucepan.
