Fresh Spinach with Tofu Dressing
Ingredients
- 8 ounces fresh soft tofu
- 3 6-ounce bags fresh baby spinach
- ¼ teaspoon finely grated lemon peel
- 6 lemon peel strips
- 1 tablespoon white sesame seeds
- 1 teaspoon Dashi
- 1 teaspoon mirin (sweet Japanese rice wine)

- 1 teaspoon sweet white miso (shiro-miso) or yellow miso
- ½ teaspoon fresh lemon juice
- ½ teaspoon sugar
Working in batches, cook spinach in large pot of boiling salted water until just wilted and bright green, about 1 minute. Drain. Cool spinach in bowl of ice water. Drain.
