Fresh Tomato and Avocado Soup

Ingredients

  • 1 pound(s) (about 4 tomatoes) tomatoes, chopped
  • ¼ cup(s) red onion, chopped
  • ¼ cup(s) seedless cucumber, chopped
  • ¼ cup(s) red bell pepper, chopped
  • 1 clove(s) garlic, chopped
  • 2 tablespoon(s) extra-virgin olive oil
  • 1 tablespoon(s) red wine vinegar
  • + 4 more ingredients
    • ¾ teaspoon(s) salt
    • ½ teaspoon(s) cumin
    • 1/8 teaspoon(s) cayenne pepper
    • 2 avocados, diced (about 2 cups)

1. Combine all ingredients except avocado in a large bowl. Mash lightly with a potato masher, stir in 1 cup water, cover, and chill for at least 1 hour or up to 6. Stir in the avocado and serve immediately.
