  • 3 green tomatoes, sliced (large)
  • 1 egg, beaten (large)
  • ¼ cup(s) plus 2 tablespoons canola or olive oil
  • 2/3 cup(s) white corn meal
  • ¼ teaspoon(s) salt
  • ¼ teaspoon(s) pepper
  • ¼ cup(s) flour

COMBINE: First 4 ingredients in a small bowl, stir well. Dip tomato slices in beaten egg. Dredge in cornmeal mixture, coating well on both sides.
