Fried Oyster and Pear Salad

Ingredients

  • 3 ripe red Bartlett pears, unpeeled and thinly sliced
  • 1/3 cup white balsamic vinegar
  • Vegetable oil
  • 1 teaspoon herbes de Provence*
  • 2 (12-ounce) containers fresh Select oysters, drained
  • ¾ teaspoon salt
  • 2 tablespoons honey
  • + 7 more ingredients
    • ½ teaspoon salt
    • ¼ cup all-purpose flour
    • 8 cups loosely packed gourmet mixed salad greens
    • ¾ cup yellow cornmeal
    • 3 green onions, thinly sliced
    • ¼ teaspoon pepper
    • ¾ cup olive oil

Whisk together first 6 ingredients; set aside. Combine cornmeal, flour, and 3/4 teaspoon salt. Dredge oysters in cornmeal mixture. Pour oil to depth of 2" into a Dutch oven; heat to 375°.
