Fried Plum Ravioli with Mint Cream
Ingredients
- 6 cups vegetable oil
- All-purpose flour
- 12 wonton wrappers
- 1/3 cup firm-ripe red or black plums
- 2/3 cup quick plum preserves
- 1 mortar and pestle
- 1 deep-fat thermometer

- 1 ½ tablespoons confectioners sugar
- ½ cup heavy cream
- 2 teaspoons fresh lemon juice
- 10 fresh mint leaves (preferably spearmint)
Drain preserves in a coarse sieve set over a bowl, pressing lightly on solids, and reserve syrup. Transfer drained preserves to a bowl and stir in chopped plums.
