Fried Plum Ravioli with Mint Cream

Ingredients

  • 6 cups vegetable oil
  • All-purpose flour
  • 12 wonton wrappers
  • 1/3 cup firm-ripe red or black plums
  • 2/3 cup quick plum preserves
  • 1 mortar and pestle
  • 1 deep-fat thermometer
  • + 4 more ingredients
    • 1 ½ tablespoons confectioners sugar
    • ½ cup heavy cream
    • 2 teaspoons fresh lemon juice
    • 10 fresh mint leaves (preferably spearmint)

Drain preserves in a coarse sieve set over a bowl, pressing lightly on solids, and reserve syrup. Transfer drained preserves to a bowl and stir in chopped plums.
