FRIED SUMMER SQUASH 2

Ingredients

  • salt and ground pepper to taste
  • 1 cup(s) sautéed dice onions
  • 1 tablespoon(s) butter
  • 1 tablespoon(s) canola oil
  • 1 teaspoon(s) fresh rosemary leaves, finely chopped
  • 5 Yellow Squash

Slice squash, In large skillet, saut squash in oil and butter. When lightly brown, add onions. Season with salt and pepper. Cook over medium heat 3 more minutes, but do not let squash get to mushy. Sprinkle with rosemary, and keep warm until served. Serves 4.
