  • ¾ cup Key lime juice
  • 1 ½ cups sugar
  • 6 egg yolks, plus 2 whole eggs
  • ¾ cup unsalted butter, cubed
  • 2 ½ cups plus 1 ½ tablespoons heavy cream, divided
  • 2 tablespoons confectioners' sugar
  • 6 ounces creme fraiche, for serving

In a saucepan combine the lime juice, 1 1/2 cups of sugar, egg yolks, whole eggs, and butter and whisk to combine.
