Ingredients

  • ¼ cup sugar
  • 2 ½ teaspoons instant espresso powder
  • 2 tablespoons whole coffee beans
  • 2 tablespoons water
  • ¼ cup Kahlúa or other coffee liqueur
  • 3 large egg whites
  • 3 large eggs
  • + 9 more ingredients
    • 1 tablespoon light corn syrup
    • ½ cup whipping cream
    • 1 cup heavy whipping cream
    • 5 large egg yolks
    • ½ cup sugar
    • ½ cup bittersweet (not unsweetened) or semisweet chocolate
    • ¼ cup Kahlúa or other coffee liqueur
    • 4 ounces bittersweet (not unsweetened) or semisweet chocolate
    • 6 ounces bittersweet (not unsweetened) or semisweet chocolate

Position rack in center of oven and preheat to 375°F. Lightly butter two 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottom of pans with parchment paper.
