Fruit Salad with Lemon-Honey Dressing

Ingredients

  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt
  • 2 tablespoons honey
  • 2 tablespoons canola oil
  • 4 medium nectarines, sliced (about 2 cups)
  • 2 tablespoons lemon juice
  • 1 pineapple, cored and cubed (about 4 cups)
  • + 3 more ingredients
    • 1 cup blueberries
    • 1/8 teaspoon ground white pepper
    • 1 cantaloupe, seeded and cubed (about 3 cups)

1. In a small bowl, whisk together lemon juice, honey, mustard, salt and pepper until blended. Add oil in a slow, steady stream, whisking constantly, until dressing is thick and emulsified.
