Fruity Black Bean Salsa


  • ½ teaspoon salt
  • ¼ cup chopped fresh cilantro
  • 2 jalapeño peppers, seeded and minced
  • ½ red or green bell pepper, seeded and chopped
  • 1 tablespoon honey
  • 1 small papaya, peeled, seeded, and cut into 1/2-inch cubes*
  • 1 (15-ounce) can black beans, rinsed and drained
  • + 3 more ingredients
    • 1 large ripe avocado, cut into 1/2-inch cubes
    • 1 teaspoon grated lemon rind
    • 2 tablespoons fresh lemon juice

Combine black beans and next 5 ingredients in a glass bowl. Whisk together rind and remaining ingredients in a small bowl, and drizzle over bean mixture. Toss gently to coat.
