Fruity Black Bean Salsa
Ingredients
- 1 tablespoon honey
- ½ teaspoon salt
- 1 (15-ounce) can black beans, rinsed and drained
- 2 jalapeño peppers, seeded and minced
- 1 large ripe avocado, cut into 1/2-inch cubes
- ½ red or green bell pepper, seeded and chopped
- 1 small papaya, peeled, seeded, and cut into 1/2-inch cubes*

- ¼ cup chopped fresh cilantro
- 1 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
Combine black beans and next 5 ingredients in a glass bowl. Whisk together rind and remaining ingredients in a small bowl, and drizzle over bean mixture. Toss gently to coat.
