Ingredients

  • ¼ cup dried currants
  • ½ teaspoon freshly ground black pepper
  • 1 onion
  • 1 ½ teaspoons sea salt
  • ¼ cup sherry wine vinegar
  • 4 firm-ripe Fuyu persimmons
  • ½ tablespoon olive oil
  • + 2 more ingredients
    • 1 tablespoon mustard seed
    • ½ cup sherry

In heavy medium skillet over moderate heat, heat oil until hot but not smoking. Add onion and sauté until soft, about 5 minutes.
