Ingredients

  • 1/3 cup chopped cilantro (optional)
  • ½ teaspoon red-pepper flakes
  • ¾ teaspoon salt
  • 1 pound green beans
  • ½ cup peanut butter
  • 8 carrots, cut diagonally into 1-inch chunks
  • 1/3 cup toasted sunflower seeds or chopped peanuts, for garnish (optional)
  • + 9 more ingredients
    • 2 cloves garlic, crushed
    • 2 pounds boiling potatoes (about 6), peeled and cut into 1-inch chunks
    • 1 tablespoon brown sugar
    • 1 pound broccoli, thick stems removed, tops cut into small florets (about 1 quart)
    • 1 cup hot water
    • 2 scallions including green tops, chopped
    • 2 cucumbers, peeled, halved lengthwise, seeded, and cut into 1/2-inch strips
    • ¼ cup lemon juice (from about 1 lemon)
    • 1 tablespoon soy sauce

1. Bring two medium saucepans of salted water to a boil. Add the potatoes to one of the pans and cook until tender, about 10 minutes. Remove with a slotted spoon and drain well.
