Garam Masala for Samosas

Ingredients

  • ½ tsp. grated nutmeg
  • 3-inch cinnamon stick, broken and slightly crushed
  • 3 bay leaves, bruised
  • 2 tsp. cardamom seeds (from about 8 pods)
  • 1 tsp. whole cloves
  • 2 Tbs. black peppercorns
  • 2 Tbs. coriander seeds
  • + 1 more ingredients
    • 2 Tbs. cumin seeds

Heat a medium skillet over medium heat. Add all the spices except the nutmeg, and toast, shaking the pan occasionally, until spices are several shades darker and very aromatic, about 6 minutes.
