  • 3 cloves garlic, minced (about 1 Tbs.)
  • 2 Tbs. canola oil
  • 1 Tbs. finely chopped fresh flat-leaf parsley
  • 3 large baking potatoes
  • ½ tsp. salt, plus more to taste
