Ingredients

  • 2 ½ cups water
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon Hungarian sweet paprika
  • ½ cup chopped seeded tomato
  • 1 ½ teaspoons cumin seeds, divided
  • 1 teaspoon chopped fresh mint
  • ¼ cup chopped onion
  • + 8 more ingredients
    • 1 cup dried small red lentils
    • ½ teaspoon ground red pepper
    • 1 teaspoon salt
    • 1 bay leaf
    • ½ teaspoon ground turmeric
    • 4 teaspoons olive oil, divided
    • ¼ teaspoon freshly ground black pepper
    • 1 garlic clove, chopped

Combine first 3 ingredients in a medium saucepan; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until tender. Drain; discard bay leaf. Place lentils in a small bowl.
