Gazpacho Salad
Ingredients
- 2 garlic cloves, crushed
- 3 tablespoons Italian dressing
- 3 ripe tomatoes, cut into wedges
- 1 cup thinly sliced peeled cucumber (about 1 medium)
- ¾ cup chopped yellow bell pepper (about 1 small)
1. Combine all ingredients in a medium bowl, stirring well. Serve immediately, or cover and chill up to 8 hours.carbo rating: 7
