Gazpacho with Feta Cheese
Ingredients
- 1 large, sweet onion, peeled and quartered
- 2 cup(s) cucumber, peeled and cut in half
- 6 cup(s) ripe tomatoes, quartered (stems removed)
- 1 quart(s) canned tomato juice or vegetable juice
- ½ cup(s) feta cheese, or blue cheese, crumbled for garnish
- ½ teaspoon(s) black pepper
- 1 tablespoon(s) balsamic vinegar

- 1 clove(s) garlic, peeled and quartered
- 3 stalks of celery, ends trimmed and cut in thirds
- 1 green pepper, seeded, and quartered
- ¼ cup(s) fresh basil, chopped
- 1 ½ teaspoon(s) garlic salt
- ¾ teaspoon(s) Worcestershire sauce
- 1 tablespoon(s) extra virgin olive oil
- ½ bunch(s) fresh parsley (about ½ c of leaves)
- 2 yellow summer squash, peeled and cut in thirds
- ¼ cup(s) fresh chives, chopped
