George Washington's Fried Eggplant

Ingredients

  • Salt
  • 2 egg yolks, beaten
  • Vegetable oil
  • 1 teaspoon salt
  • 1 tablespoon butter or margarine, melted
  • 2 small eggplant
  • 1 1/3 cups all-purpose flour
  • + 2 more ingredients
    • ¾ cup milk
    • ¼ teaspoon pepper

Peel eggplant, and cut into 1/2- inch slices. Sprinkle each slice with salt. Let stand 30 minutes; rinse and drain well. Combine flour, salt, and pepper; add milk, egg yolks, and butter, mixing well.
