Ginger and Pink Grapefruit Cheesecake

Ingredients

  • 1 tablespoon water
  • 20 whole graham crackers
  • 8 tablespoons unsalted butter
  • crystallized ginger
  • 2 ½ teaspoons vanilla extract
  • 3 tablespoons crystallized ginger
  • 1 1/3 cups heavy whipping cream
  • + 9 more ingredients
    • ¼ teaspoon salt
    • 2 large pink or ruby grapefruits
    • 6 tablespoons sugar
    • 4 large eggs
    • 1 1-inch-long piece fresh ginger
    • 4 8-ounce packages cream cheese
    • 1 cup ginger preserves
    • 1 ¼ cups sugar
    • 1 tablespoon ground ginger

Position rack in center of oven and preheat to 350°F. Butter 9-inch springform pan with 2 3/4-inch-high sides. Blend graham crackers and sugar in processor to coarse crumbs. Add 1/2 cup butter.
